Masala Omelette

Serves 1
Quick/Easy  Preparation time: 5 minutes


2 eggs, lightly beaten
1 tablespoon finely chopped onion
½ red pepper, seeds removed, chopped
1 tablespoon chopped fresh coriander
1 green chilli finely chopped (or to taste)
1 chopped tomato
1 tablespoon rapeseed oil

  • Combine all the ingredients (except the oil) in a bowl and mix well.
  • Put the oil in a non- stick frying pan.  When hot, pour in the egg mixture.
  • Keep mixing the egg whilst it is solidifying, when semi solid let it form into an omelette shape
  • Turn the omelette over and press down.
  • Remove when cooked through and serve immediately.
