Roasted vegetable and hummus wraps 

Serves 1
Preparation time: 15 minutes + cooling time


½ red or yellow pepper, sliced
4 medium mushrooms, sliced
½ tablespoon olive oil
1 wholemeal wrap
2 tablespoons hummus
salad leaves 


1. Cook the peppers and mushrooms gently in frying pan with the olive oil for a few minutes until softened, drain and allow to cool.
2. Place  the hummus in the centre of the wrap and season with a little paprika
3. Top with the cooled roasted vegetables and salad leaves
4. Roll up, slice in half and serve
