Saag Aloo - spinach and potato curry

Serves 6 as a side dish
Preparation and cooking time: 25-30 minutes 

Ingredients

2 tablespoons rapeseed oil
1 large onion
4 cloves of garlic, crushed
1 inch of fresh ginger, peeled and grated
3 green chillies, seeds removed and chopped
1 teaspoon turmeric
750g potatoes, peeled and cut into 1 cm cubes
1 teaspoon red chilli powder
400g spinach leaves roughly chopped

Method

1. Cook the onion, garlic, ginger and chillies and cook for 2-3 minutes in the oil in a large non stick frying pan.
2. Stir in the turmeric and cook for a further few minutes
3. Add the potatoes, chilli powder and a little water, stir and cover.  Cook for 15-20 minutes stirring occasionally.  You may need to add a little more water.
4. Meantime cook the spinach in a large pan until wilted. Add to the potato mixture, season and serve.
