Tofu toasts

Serves 2

250gm plain firm tofu, finely chopped  
1 onion, chopped
½ tsp grated ginger
½ tsp turmeric 
½ tsp dry roasted cumin seeds, finely ground 
½ green chilli deseeded and chopped 
1 tbsp chopped fresh coriander
1 teaspoon rapeseed oil


1. Gently cook the onion in the oil, in a non stick pan, until softened.
2. Add the ginger, turmeric and chilli and cook for another 2 minutes
3. Add the tofu to the pan, mix and cook over a low heat for about 5 minutes stirring regularly.
4. Add the cumin powder and fresh coriander and stir.
5. Serve with wholemeal chapatti or over wholemeal bread.

Cooking tip – use to top toast – it makes a great alternative to scrambled eggs.
